In a few days we will have one of the most anticipated days of the year — not for the game, but for the food! The Super Bowl is the No. 1 snack consumption day of the year. Many New Year's resolutions are broken on that day! But you don't have to fumble healthy eating habits at a party. Plan some healthy dishes, such as these recipes, along with a few of your old favorites. You can enjoy the game guilt-free! All these recipes are simple and can be made the day before, so the cook can enjoy the game, too!
"Touch Down" Taco Soup
- 1 tablespoon canola oil
- 1 medium onion, chopped
- 3 (14.5 ounce) cans diced tomatoes
- 3 (15 ounce) cans pinto, kidney, red or black beans, drained and rinsed
- 1 (4 ounce) can chopped green chilies
- 1 (10 ounce) package frozen corn or 1 (14.5 ounce) can corn, drained
- 1 package taco seasoning
Heat oil in a skillet; add onion and saute until clear. In a large pot or crock pot add onion and remaining ingredients. Add water to desired thickness (some people like soup, some like thicker chili). Simmer at least one hour.
Garnish individual bowls of soup with one or more of the following: grated cheddar cheese, sliced olives, diced avocado and nonfat sour cream.
- Optional: add 1/2 pound cooked lean ground beef or turkey
Makes approximately 12 servings

"Extra-Point" Spicy Taco Dip
- 2 cups nonfat sour cream
- 3 tablespoons tomato paste
- 1 package taco seasoning
Combine sour cream and tomato paste; blend well. Mix in taco seasoning (adjust amount to your taste.) Refrigerate until ready to serve.
Makes about 2 cups
"Fiesta" Shrimp Cocktail Toss
- 1 pound medium shrimp, cooked, peeled and deveined
- 3/4 cup Italian salad dressing
- 1 medium tomato, diced
- 1 (4-ounce) can diced green chilies
- 1/3 cup sliced green onions
- 2 tablespoons chopped cilantro, (optional)
- 2 teaspoons honey
- 1/8 teaspoon hot pepper sauce
Toss shrimp, dressing, tomato, chilies, green onions, cilantro, honey and hot pepper sauce together in medium glass or ceramic bowl; refrigerate for at least 60 minutes.
