Grilling fresh wild salmon for dinner tonight? Complement your meal with grilled Veggie Kabobs!
Veggies
- 2 red bell peppers cut into large chunks
- 1 green bell pepper cut into large chunks
- 2 small zucchinis cut into medium chunks
- 1 broccoli crown cut into large chunks
- 1 red onion cut into large chunks
- 25 white button mushrooms
Marinade
- 2 tablespoons olive oil
- 2 tablespoons red wine or balsamic vinegar
- 1 teaspoon soy sauce
- 1 tablespoon honey
- ½ teaspoon garlic powder
- Salt and pepper
- 10-20 wooden skewers
Prepare all the veggies and place in a large plastic, sealable bag. Whisk the marinade ingredients together and pour into the plastic bag over veggies. Shake bag so that all veggies get covered. Let the bagged veggies sit for about an hour, turning the bag every 15 minutes.
Skewer alternating veggies and grill over medium heat for about 15 minutes. Turn often to prevent burning.
